Emails are not going with Invitations to the employees

Hi Emails are not going from the app to the users with invitation. Can anyone help

Yes, just installed a docker instance and client with the admin account and tried the software, there are some issues on exports and others, but not critical.
The fact is I've created a user but they need to accept an email invitation. There is no option to configure SMTP settings anywhere, and if I configure exim on the docker instance, I need to restart the container, so settings are lost.
Anyone has been able to configure this? How can we work with more than one user if there is no option to create them and let them use the software?
I've readed all the docs and I can't find any clue. Here on the forums seems there are any useful info either.

Anyone can shred some light, please?

I did edit .env file and added the following environment vars seen at mail.php, but no luck either

MAIL_HOST=smtp-relay.gmail.com
MAIL_PORT=587
MAIL_ENCRYPTION=tls
MAIL_USERNAME=notifications@example.com
MAIL_PASSWORD='PASSWORD'
MAIL_SENDMAIL_PATH="/usr/sbin/sendmail -i -t"
MAIL_FROM_NAME="Time Tracker"
MAIL_FROM_ADDRESS=notifications@example.com

Well, just noticed I can create users without sending them invitations, so I think I'm going to do that as configure smtp seems impossible as for now. Laravel logs shows nothing at all, web interface shows no error either, I can put any misconfiguration in both .env and config/mail.php or even delete mail.php from config directory and the system shows no error at all, just as it this simply doesn't work at all.
